Moroccan Mint Tea

Mint tea is a wonderful ritual in Morocco. Served in beautiful coloured tea glasses from elegant silver teapots. Normally comes on an ornate silver tray. When served, it is poured from great heights to aerate and produce frothy foam on top. Sweetened with sugar, it will revive you from a day of haggling in the souqs. Yet another magical part of Moroccan life!

Moroccan Mint Tea (serves 6)

3 teaspoons Chinese Gunpowder tea
15-20 sprigs of fresh mint
1/2 cup of sugar
Bring water to the boil.

 

Place mint and gunpowder tea in teapot which holds 6 cups of water.

Fill teapot with boiling water & stir in the sugar.
Cover and steep 4-5 minutes.

Place a sprig of mint in each tea glass, & pour hot tea over the mint.

Serve.
Sip and be transported to fragrant Morocco!!
